A review of Newcastle (NSW Australia) Pudding Lady Christmas Plum Pudding by Matthew Holden.

REVIEW:
We tried the Newcastle Pudding Lady Traditional Plum Pudding 1kg this Christmas.
It comes sealed in a double layer plastic film, wrapped in a calico cloth bag. Very much like the traditional puddings of yesteryear.

The servings sizes were suggested as 100gm which, when combined with brandy custard, make it a real winner. We suggest you stick to this size, but as Christmas pudding is quite rich, you might want to adjust the size appropriately - may be more!

We followed the instructions for microwave reheating and although the instructions are generic, they were not exact for this size pudding.

To reheat this pudding in 650W microwave, we used medium heat (50% power) for 60 seconds, then turned the pudding over and heated again on medium heat (50% power) for 60 seconds.

We slow cooked the custard over a gas stove, stirring the milk constantly constantly until thickened. It is a fine line with the custard as you do not want it to be too liquid, nor do you want it too thick. I over-thickened the custard, removed from the heat and then added 2 shots - or 60ml - of Brandy to the custard and stirred through. This thinned the custard back to a good level.
